I have just been offered the task of training chefs on the small Caribbean island of Mustique during the off season. The company will fly myself and my fiancee from France to Barbados then on to Mustique Island. There we chill out for a week in one of the villas, diving, trekking, mountain biking and relaxing. Then during the second week I will be teaching the company's chefs a few bits and pieces. Then we will be flown back home to France. No money is exchanging hands, but they are covering all costs of the holiday. If all pans out well, this will be a yearly event. Two weeks every year on this island sounds pretty damn good to me.
