Why would you want to want it to go in to the roof cavity? Outside venting is great.
Is yours an inline fan like this or is it part of the range hood?

If you’re sticking with gas then venting outside seems like the prudent thing to do. Because combustion.

I'll second (third? Fourth?) venting to the outside. Gas ranges, in particular, are linked to indoor air pollutants, even when off. Venting to the outside is beneficial for your health.

You've got a peculiar setup. Upgrading won't be easy or cheap. I'd continue venting outside though.
Cheap not sure but not necessarily difficult. We have a unit where we just built a around it and the fan is on the outside of the house so not much noise. Only part that is difficult with that solution is running the connection to the outside.
