Once you've done it a few times you can keep it pretty loose recipe-wise. You'll also figure out what flour you prefer (which can depend on application).

Most of the Italian grandma recipes say things like: "Dump a pile of flour on a counter, make a well in the middle, crack in a couple of eggs, and combine. If it's too dry, add a little water or just leave some of the flour on the counter. If it's too wet, add some more flour. Kneed it for a bit, then refrigerate for a while before rolling it out."

Third time's a charm. Last time extrusion took over an hour. This time it took 20 minutes. Used less liquid, a different flour to egg ratio, and smaller pieces of dough loaded into the extruder. Also made rigatoni instead of spaghetti.

Wife got me the meat grinder attachment for father's day. First use yesterday for burgers. Damn were they good. Unlikely to buy preground meat ever again.

Late to the party here but....I have the Pro 6 qt and I regularly use:
Spiralizer attachment
Pasta Attachments
Grinder

In addition, I have an extra bowl and an scraping beater blade....comes in handy when baking multiple cakes and cookies. Aside from the coffee maker, it's the only appliance allowed on my new countertop...the rest spend time in the cabinet until they're used.

So I learned a new use for the flat beater blade. It will nicely shred cooked chicken breasts or pork loin. I baked up a pork loin in BBQ sauce and while it was still hot tossed it into the mixing bowl with the blade already rotating at a medium fast speed. Within 2 minutes I had some nicely shredded pork for tacos, sandwiches, or tamales
