what is sufficient time for a bike to be built? My frame and parts were on the board to be built last friday so would today be a good day to chime in and check if it is done?

It wouldn't be unreasonable to check in on it and ask for a completion date. You should have been given an estimated completion date when the parts came in.

I have never had a shop build an entire bike for me, but the shop helped me put my Bullit together. I did a lot of the easy stuff and got pointers on some stuff, while they faced the headtube and bottom bracket. I had one guy help me bleed the brakes, but I did most of the work. I think it was like 2 hours total build time.
