Simple - keep the water out of it and it won't dry out and crack.

Don't let mink oil anywhere near it. Lanolin works fine for waterproofing and/or conditioning.

Hate sheep oil?

Nikwax Aqueous Wax treatment is nice stuff.

So basically, y'all are saying, "yeah, treat the tape too"?

I have plenty of leftover Brook's Proofide, so I'll use that, just wondering how it'll work with my hands or if I'll even notice?

Use VERY little of it. The main thing is keeping moisture and salt out of the leather. Clean it every once in awhile and re-treat. Make sure to thoroughly wipe down the excess.

yup, bothe the Wife and I have leather handle bar covering . Ours is ( disscontinued ) Rhode Gear Handlebar hide , and we don't do any thing specil to it , and it has lasted for years
