I'm having leftovers....but they're pretty good leftovers.
I do a stuffed and grilled chicken breast with the stuffing being mozzarella cheese, parmesean cheese, marinara sauce, pesto, lime juice, bacon, and spinach. Put that over top of some tri-color pasta with a greek vinagrette and a side of green beans. Pretty darned good.
I'm going over to Ashley's Restaurant and having Tola cook me up something tasty! Ashley's kicks ass - local breakfast/lunch spot run by this super cool Greek woman who just happens to be the grandmother of a couple of kids my sons play hockey with! So she always gives me the hookup at lunchtime!
