What do you do with them?

I picked up a bunch tonight and was thinking about making a killer salad dressing, for some spinach.

I use them in chili.

chili is a good option

they are good roasted and stuffed with meat/rice/cheese

i've used them before to make hot pepper jelly - which is AWESOME if you've never had it

Good poblanos make the world's greatest rellenos. Bar NONE. Sadly, poblanos are all over the map WRT to heat and flavor.

This is what I pretty much just did.

Roasted them on grill and then blended with a bunch of other random stuff. I put it on some grilled chicken. WINNER. This is delicious. Needs to be spicier next time though.
