Make sure you have hidden and system files visible.

Also, I noticed that the files on the ipod have funky names, not the filenames I gave them. Or am I looking in the wrong place?

Use Winamp.

I took my friends ipod, connected it to my PC, launched winamp, and pulled all his music off his ipod to my hard drive, correct titles and all.
