Any benefit to having a quad core proc if I am running apps like Photosop, GIMP, etc? I am looking at the Dell refurb desktops and I see some Core 2 Quad machines in there for a decent price.

I'm sure I would be perfectly happy with a Core 2 Duo, but I am wondering if a quad core would boost things like running complex filters, running more than one graphics app, etc.

Also, any benefit in running music recording apps? (Ardour, Protools, etc)

Most advanced apps like Photoshop are multi-threaded so they'll make use of multiple cores. Also, the core(s) can be dedicated to running Windows/music/Ridemonkey/whatever during the use of Photoshop.

I'd go quad if I were upgrading now. Of course, I'd also probably go i7 :D
