I had been running RF Evolve DH. They kept coming loose and I found a good deal on a new Saint setup (FC-M815-1). When I pulled off the RF BB there was 1x2.5mm spacer on the drive side and 2x2.5mm spacers on the non drive side.

According to the instructions that came with the Saints, for an 83mm BB shell I should be running 2x2.5mm spacers on the drive side and 1x2.5mm spacer on the non drive side. I tried this and it seemed all wrong. It definitely seemed like my cranks were too far out from my frame, my shifting was all messed up and to make my E.13 SRS work I would've had to add more spacers behind the plate to bring it out. I took everything apart and re-installed with 1x2.5mm spacer on the drive side and 1 2.5mm spacer on the non drive side. This definitely seems like how it should be to me.

Why do the instructions say to run 2 spacers but 1 is working best for me? Does it even matter?

if it works it works. double check to make sure its not throwing your chainline off. if your chainring is still pretty much in the middle of the cassette, you're good to go.
