Real Udon, Ramen or Soba noodles, boil for two or three minutes in just enough water to cover them, then turn of the heat and add a little Dashi (1 level teaspoon), a little more Mirin (a dash) and some good quality Soy (6-7 teaspoons). Add some shredded roast chicken (or beef or whatever), some finely chopped spring (garden) onions and voila.
I like a lot of shredded chicken in mine. I find day old roast chicken brown meat is the best tasting.
