I'd say like a super, super lean cut of beef. Cooks and has a texture like that as well. I tend to do a very short cooking time over high heat. This was done in a pan with a little S&P and peanut oil.How's that flavor compared to something like duck?
Was just going to say, must be seared hot or deep fried hot. Doesn’t really work well with slow methods, there is such little fat.
