Stirfry. Whatever comes fresh out of the garden combined with beef, chicken, or pork.

A lot of Thai places out here serve pineapple fried rice (usually with BBQ pork) that is surprisingly good. Chinese fried rice is always good, as is good ol' steamed white rice under a stir fry, and sushi rice.
Indian biryani is tasty.
Paella is killer. Check out Mark Bittman's tomato paella in the New York Times archive. It's a great technique I've used with lots of variation.
But to me there is no question that risotto is the king of all rice dishes.
