I was wondering if there is any way to give a rocky mountain switch 7 inches of travle in the back.

There aren't any aftermarket links to my knowledge. Dangerboy is who I'd check with first though.
However, if the bike uses a 7.5" i2i shock with a 2" stroke you could replace it with a shock with a stroke of 2.25". Assuming a leverage ratio of 3:1 this would yield 6.75" of travel.
Look to see if stuff gets in the way of stuff too.
