Saddle position vs. bar height

What is average, would you say, for saddle/bar height differences on XC bikes? I know it varies among riders, frames and uses but just trying to get an idea. Right now I feel like my saddle is too high in relationship to the bars but if I raise the bars too much, it makes handling funky.

My saddle is 6" higher on my fs race bike, but with 1" of sag it's more like 5". I am tall and have very long legs, and my stem is upside down for negative rise. It climbs like nothin else..

On my XC and road bikes, the saddle is about 2-3" higher than the bars. I like a more "racey" riding position - even on my DH and DJ/DS bikes the bars and saddles are about level.

I've been getting progressively shorter stems for my XC bikes since I started DH riding. I just put a 100mm - 5 rise stem on my Indy Fab on Sunday, replacing the previous 120mm - 0 rise. It hasn't seemed to have affected my climbing much and I like the handling better.
