Mmmm....Sangria! Excellent!!!

Well, if you don't have a lot of time (most sangrias need to sit overnight to get their fullest flavor) and don't want too much alcohol, try this one...

Mexican Sangria

4 cups dry red table wine
2/3 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/2 cup caster sugar (or run regular granulated sugar in the food processor for a min or two--this helps it to dissolve quicker).
2 lines or 1 apple, sliced, to serve

Half fill a large jug with ice cubes. Pour in the wine and the orange and lime juices.

Add the sugar and stir well until it has dissolved. Pour into tumblers and float the lime or apple slices on top.

Serve at once.

OR

Cognac Sangria

1 bottle red wine - Rioja, or other substitute
1 liter soda water
3oz Cognac
1/4 cup sugar
1 apple, in chunks
1 orange, in wedges
10 cherries

Mix all ingredients together, and chill overnight. The next day, pour over ice in a pitcher and serve!

OR

Grand Marnier Sangria (this has excellent orange flavor)

1 bottle Woodbridge Cabernet
4 shots Grand Marnier
6 cherries, sliced
2 oranges, segmented
1 lemon, quartered
1 lime, quartered

Mix all ingredients together and let sit for a few hours. Strain and serve over ice. I like to put a fresh piece of fruit in the glasses before serving too.

This one is quite good too.

Ingredients:

* 1 1/2 L Red wine (Cabernet Sauvignon)
* 1 cup Sugar
* 1 large Lemon, sliced
* 1 large Orange, sliced
* 1 large Apple, cut into thin sections
* 3-4 oz plain Brandy
* Soda water (or use orange or lemon flavored soda instead of the soda water)

Mixing instructions:

Mix wine, sugar and fruit, and let sit in the fridge for 18-24 hours. The mixture will have a somewhat syrupy consistency. Before serving stir in brandy and cut the mixture with soda water until it have a thinner, more wine like consistency. Serve from a pitcher in wine glasses.

Bolo's Sangria - Bobby Flay.

2 - bot dry white wine
3/4 - cup brandy
1/2 - cup triple sec
3/4 - cup simple syrup (equal amounts sugar and water heated until sugar is dissolved - do this slowly so you don't burn the sugar)

3 - 4 white peaches, skinned, pureed (or 1 cup peach nectar)
3 - oranges sliced thin rounds
3 - green apples cored, sliced thin
2 - lemons sliced thin rounds
4 - peaches pitted, sliced thin

Combine all ingredients in a large pitcher. If using fresh peaches, taste for sweetness and add more syrup, if needed.

Refrigerate, covered, 2 hours or up to 2 days. Serve over ice.

I've done it for about 25 large parties (30-50 guests, double or triple the quantities, plus beer/wine, etc) and there's never any left, just some of the beer and wine.

Best on a hot summer day.
