Do you guys replace parts before they break just to be safe?

How long would you jump on a set of pedals?

Handlebars?

Fork?

I think I am a smooth rider and I don't try anything huge so even if I case a jump its not that bad. But I ride a lot and sometimes I get that phantom creak in my bike that makes me think its a ticking time bomb.

Lately I've been thinking of my snafu pedals I've been using for years and I wonder if one day one might snap off in the middle of railing a 180 berm at 20+ mph, that would really suck!

Am I being paranoid?

From my experience, most people just ride it until it does bend/break. That is if they haven't already upgraded for the sake of upgrading or trying something new. Though this is with 20's, I'd be a bit worried on a big bike with suspension to wear out.

suspension forks- if they are burly every 3-4 years, if light weight, every year and sell em off.
handle bars- i bend bars all the time so when ever that happens or a deep gouge
wheels-clearly
pedals-any noise or movement-sucks when they blow up on you
stems-the first time they slip

Snapping a chain, fork, or handlebar are all scary thoughts. One out of the three is cost-prohibitive to replace, so I keep a VERY close eye on it almost every time I ride. Chains and bars, I'd think replacing them annually would be enough.
