Can I use 8 speed shifters for a 7 speed bike? Or is this a completely stupid question?

Yeah, you can. Just be sure you don't go that extra click, otherwise the chain could jump off and get stuck between your spokes and cassette. Not a pretty thing to try and get un-stuck.

My recollection is that 7 speed cog spacing is the same as 8 speed. All you need to do is set the limit screws on the derailleur so you won't overshift.

I use 8 speed shifters on my 7 speed winter bike.

Just set the deraillleur limit screws so the derailleur can't move any further on the 8th click!
