Watched Unwrapped on the Food Network and they had a feature on Spiedies - a southern tier of NYS delicacy - basically marinated meat on a skewer ( could be lamb, could be chicken, could be venison, could be whatever I guess)

They get grilled up and served on an italian roll. Mighty tasty!

Never knew they had such a big festival though. 80,000 people over three days at Spiediefest!

I prefer chicken or pork spiedies myself. Never had them before moving to NY but they are very good. The secret is the marinade of course, either State Fair or Lupo's if you're making them at home. I've gone to the festival three or four times just to eat my way from one end of the grounds to the other.

Since Wegman's showed up down here in the DC area, I can get my hands on State Fair Spiedie Sauce.........

State Fair speedie sauce (put out by Salameda) isn't true speedie sauce... Lupo's speedie sauce is the only real speedie sauce.
