You can't use a shimano one. Their actuation ratio is 2:1, SRAM is 1:1.

yes. sort of. SRAM makes "rapid-fire" TYPE shifters, you activate both up/down levers with your thumb so they're triggers. High-end is X.9, lower end is X.7, both work SUPERBLY well, and IMO feel better than Shimano.

No, one is not used as a proper name, one is used as 3rd person singular indefinite pronoun. I think. Think of it as if he'd said "can someone use a Shimano..."
