Because vanilla ice cream has very little vanilla extract in it. The majority of it is cream, which is white. If you wanted an actual answer...otherwise, carry on.

Because impurities cause a chain reaction in crystallization...causing less than ideal crystalline structures to form. The more pure the cocaine, the (typically) more pure it will be, which is why (snorted) cocaine is usually whiter and more $$.
