Leave the wings uncovered in the refrigerator for a day to dry them a bit. Smoke them, then quick fry them in Avacodo oil.Anybody have any luck smoking wings with an electric smoker? Tried various methods but the skin always ends up gummy.
Smoke them. Then fry them in Canola oil. 360 10 minutes. Let them rest 20 minutes under a Pot lid and foil before you finish them in any kind of sauce.Leave the wings uncovered in the refrigerator for a day to dry them a bit. Smoke them, then quick fry them in Avacodo oil.

How do you buy your wings? They are very expensive lately.I made my grilled wings for family this evening. Another huge hit.
Costco. Pre cut. Not the biggest ones but plenty meaty and the best price around. How do you buy your wings? They are very expensive lately.
Cut Perdue wings have gone from $5/lb to 12/lb overnight. Do the math...Hard hitting journalism

Rice Flour works well also.ok these turned out fantastic.
started with bulk wings ($2.25 a pound!) cut them and left skin on, tossed them in a bag with baking powder, salt and pepper.
preheated over to 425*
Wings then get coated lightly with Weaver's Spicy Chicken Dust and VERY lightly with my cousin's dried hab shake
I made a sauce with Ray's bbq and homemade mango/ghost pepper sauce I get from a guy.
20 min in oven dry, then lightly brushed with sauce, flip, brush and another 20 minutes.

My cousin's dried pepper shake is the stuff of legend. 90% of his and my brother's gardens are peppers. They're freaks. Anyway that shake is the best. True story. Wings crisp up very nicely due to the baking power and the flavor/heat was great.
I bake my wings, not air fry like some of you guys. Baking powder really does make a difference in how crispy they turn out.i dunno what you guys are on about tossing with baking powder and such, i find that to be completely unnecessary.
Did them on the grill. 225 for 4 hours. charcoal weber grill. plenty left over.... Franks and butter... Marie's Blue Cheese....Oh my...
