I seem to end up here a couple times a year. Food's awesome. Conceptually not that different than Americanized Chinese food, but less fried shit, more flavorful, etc. Just way better. It of course varies a fair bit by region too.

when i was in china we had a business lunch. there was a bowl of broth with some veggies and noodles in it, then a whole cooked fish just plopped on top.

HAB, what part of China? I travel to the southeast of China a few times a year. My favorite part of the meal is when you wash your plates/chop sticks with tea before the food comes out. Thats when you know its the real deal.

Cathay Pacific Business Class is quite nice as well. They would serve champagne for us during boarding when leaving Hong Kong.

I flew coach from D.C to Qatar. 14 hours and never got up, left my seat, or fell asleep. It wasn't on purpose, it just happened to turn out that way.

Cathay is great, thats who we usually fly.
