I think I can next month. I am in Boston at the beach now. Uncured is betterer. So that will have to wait until I get to South st in Philly next month... I will trade new mexico chiles for guanciale....
I've broken piles of those little skinny levers over the years. The skinny ones fit under the bead more easily but they also snap like twigs when I start cursing and trying hard. I don't think the DT rims help. They have always seemed to fit tight with Maxxis rubber.
