This worked a treat, although I thought I had some Thyme but when time came I realised I didn't so substituted Sage and it still tasted awesome!! :D

Baked Pork Chops With Pears And Ginger

Ingredients
3 pears, peeled and cored
2 tblsp shredded fresh ginger
olive oil to drizzle
4 pork chops
½ cup chicken stock
¼ cup white wine
¼ cup cream
1 tsp prepared mustard
1-2 tblsp chopped fresh thyme or 1-2 tsp dried thyme

Method
1. *Cut pears into sixths. Place in a large lasagne-style baking dish with ginger.
2. *Drizzle with olive oil, season and bake at 200ºC for 15 minutes.
3. *Brown pork chops on both sides in a dash of oil in a very hot frying pan. Arrange pork on top of pears.
4. *To the frying pan, add chicken stock, white wine, cream, mustard and thyme. Bring to the boil and pour over the pork and pears.
5. *Return to a 180ºC oven for 20-25 minutes or until the pork is tender. Serve with creamy mashed potatoes and winter vegetables.

Cooks Tips
This recipe is equally delicious when chicken pieces are used in place of the pork chops. If you choose to do this, you will need to adjust the cooking time; bake the chicken pieces for around 45 minutes. When cooking with chicken, use apples in place of the pears and instead of thyme, try marjoram, oregano or sage.
