we are up int the hundreds for the third day in a row.
Anyone have any great salad/grill/no -cook ideas?

here's a really terrific hearty pasta salad. I made a double recipe for picnic at a local music fest and it got rave reviews.

Tortellini with Roast Beef and Broccoli in Vinaigrette

18 oz cheese tortelleni, cooked. I use the stuff from Costco
3 C broccoli florets
24 oz roast beef, get the deli to cut 1/2" slices
1 red bell pepper, slivered
1/2 red onion, slivered
1/2 C sliced pitted kalamata olives
1 can artichoke hearts, drained and chopped

Steam broccoli florets and rinse in cold water
Slice roast beed 1/4" x 2" strips

Toss everything. You can use a nice Italian dressing ( I really like Bernsteins' for pasta) or make a dressing:

2/3 C olive oil
6 T red wine vinegar
2 cloves garlic crushed
1 tsp salt
1/2 tsp ground black pepper


I'm thinking this would be yummy with a basalmic vinaigrette dressing.

i always dig a good white bean salad...

rinsed cannelini beans
chopped red onion or scallion
cumin and coriander
salt and pepper
some fresh squeezed lemon juice
olive oil
chopped parsley

mix and serve.

hmmm....

Reminds me of a white bean and wild mushroom ragout i do for salmon...

...tasty!

We usually take like 3 Cucumbers and 2 Tomatos and 2 Bell Peppers, de-seed and chop both up then toss them with some sweet vinagrette.

Quick, easy, cheap and best of all, it's cold.
