I generally buy pre-made frozen mac and cheese whenever I am also buying pre-made frozen PBJ sandwiches and pre-made frozen chips and onion dip.

I'm not saying it wouldn't eat it. I'm just saying it probably takes longer to microwave that crap than it takes to prepare some fresh stuff. And that TJ's stuff probably costs 6 times as much.

The only way to do mac & cheese:

5 cups cooked macaroni
(approx 4 cups uncooked)
5 tbsp butter
2 eggs
1/2 tsp salt
1/2 tsp pepper
3 cups milk
2 cups shredded mozarella cheese
4 cups shredded cheddar cheese

Cook the macaroni until done as usual.
Do not overcook it. Drain macaroni in
strainer.

Place macaroni, butter, salt,pepper,
milk, mozarella cheese, and 3 cups of
cheddar cheese in casserole dish. Mix
eggs in a bowl first and then stir into
mixture.

Cover everything with aluminum foil and
cook for 45 minutes at 350 degrees.

Uncover and add extra cup of cheddar
cheese across the top. Bake uncovered
for another 15 minutes.

None of the bagged cheese either, you better shred fresh.

My wife made mac & cheese once that had all sorts of exotic stuff in it, including nutmeg. Best mac & cheese ever. Took every pan in the house to make and she's never gotten over that. :D

MMMMMM that crunchy cheese is good. I too enjoy the consistency of mac n cheese that has been frozen and reheated. It is just like cafeteria mac n cheese. I cover it with ketchup and destroy it.

You'll need to try my mac-n-cheese and then there will be no contest! Unfortunately, there isn't any in my freezer right now...there never seems to be enough left to freeze anyway ;)

Take your frozen mac and cheese and do this...

While still somewhat frozen (firm) slice it into bite size pieces. Dip in batter and deep fry.

Serve with honey mustard. :drool:

If you can make a basic cheese sauce, then you can make great mac&cheese.

To make the sauce, start by melting a pat of butter in a sauce pan. Then add about a teaspoon of all purpose flour, and stir till it's dissolved and just starting to brown. This is called a roux. At this point you want the roux to be of liquid consistency not clumpy.

Next add your favorite cheese (cut into cubes or grated ) and enough milk to make a sauce (1/4 cup or so ). Keep stirring over med. heat until melted and thick. Season to taste with salt and pepper.

Next step is to mix cooked, strained pasta with the sauce and place in a greased baking dish. Cover the top with grated cheese and bake at 350 uncovered until cheese has turned golden brown.


Lately I've been making it South Western style with mexican melting cheese, ( like the queso dip you can get at a mexican restaurant )Monterey Jack cheese, cheddar, and fresh chopped serano peppers, and chipotle tabasco hot sauce.

Good stuff.

Try Annie's (brand name) Macaroni and Cheese. Really fresh and tasty. I would describe it as orgasmic lol.
