So, I heard somewhere that Tri Tip steaks are pretty much a west coast only thing, is this true? Surely it can't be. Every cow has a couple of tri tips in it, I can't imagine that sweet slab o' meat gets wasted everywhere else in the country...

It's usually chopped up into sirloin tips on the east coast (if I am not mistaken).
Often used in 'sirloin ground' - used in 'premium' frozen burgers.

As a 'roast' it's still new to the East and Canada.

I have a boxload of stories trying to get it up here from 'butchers' who've 'never heard of it' etc.

Sometimes, though, i've been able to get them to cut me the 'sirloin tip roast' - same thing, pretty much.

That kinda brings a tear to my eyes, in a sad way...

Tri tip is rad, it's pretty much the perfect party/bbq hunk o' meat ever ripped from a cow.

A few of the nicer restraunts in the are (Seacoast ME/NH) are starting to have it as an entree.
