we are hooked on my pie.
2 full heads broccolli
one white onion
2 cobs fresh corn
one carrot
1/8 of a red pepper
1/2 cup colliflower
3/4 cups each of cheddar and swiss cheeses
1 cup milk
1/2 cup cream
3 eggs
1 & 1/4 cups bisquick mix
saute the veg starting with the corn, onion and the broccolli stem after it's skinned and sliced thin. Then the carrrot and lastly the broccolli and colliflower. Add seasoning to taste...your choice.
pour the veg in a deep dish and cover with shredded cheese.
whisk the liquid ing. and the bisquick and pour over the pie and bake at 400F for 35 minutes or till crispy on yop and a fork is extracted cleanly.
serve with a large salad and you have a great veg meal.
This is a quick meal and is scrumptuous. Do not save on the fat>use real cheese.
