I'm trying to help a buddy out. Tonight he brought over his new-to-him '10 Demo 8. He had some kind of older E.13 guide that is clearly not going to work. What are the popular guides that work with this frame? Is it ISCG or ISCG-05?

Would any models of this guide work?

Also, looks like this frame needs an offset dish rim? Is that correct?

The old frames have ISCG adapters. Try the Straitline Silent Guide. No moving parts, strong and simple. And quiet.
Not sure about the offset rims. But the frame comes with a 135mm rear width

I have a Straitline silent guide on my 2010 Demo. I've had it for 1 season and love it.

The 2010 Demo has iscg old mounts and the rear wheel needs to be offset 6mm to the drivers side (zero dish).
just to be clear, you are refering to the HUB needing to be 6mm toward the drive side; or RIM 6mm toward non-drive. depends on reference. tl:dr, the wheel needs a 6mm offset in the direction of less dish.
