Two reasons:

A)They tend to sound like they have rice in their mufflers

B) Most of the cars are from asia, and the "ricer movement" was more or less perpetuated by SoCal Asians... (Kinda really racist)

Who/What Exactly Is a Rice-Boy?

Rice-Boy is a stereotype. The typical Rice-Boy can be identified by his car, or rather what he does to it. Generally, Rice-Boy will start out with a car that was not meant to go fast (typically a Honda Civic), and attempt to "fix it up," usually consisting of aftermarket rims, lowering springs and an aftermarket exhaust system with a large exhaust tip.

Most Rice-Boy cars (or "Rice Rockets") have the usual complement of stickers proudly displaying features that the car might or might not have, most notably, the Honda VTEC sticker from the later model Preludes, and the plaques from the later model Integras.

Rice-Boys do not exclusively drive Japanese cars. There are quite a few fake Mustang '5.0's and Camaro Z28's out there, as well as quite a few strange looking Neons.

i used to be a riceboy. '90 300ZX, intake, exhaust, speeding, etc. then i wised up and now wear hiking boots everywhere and drive a pathfinder on mud tires

cavaliers are definitely included, with extra poor taste demerit points as a default. the Z32 was kind of heavy (~3250 lbs for the n/a model, source), but if you wanted absolute performance rather than style + performance you'd have been driving an ugly supra instead

Nah, But I did drive my sisters 97 cavalier over christmas break. It was fun. I was chillin at 110 mph on I-80 through reno at 12 AM. Kinda freaked her out though.

i for one dont see a problem with my avatar, she is not in a thong there is nothing exposed that you couldnt see walking down the street. it is a very toned down version of the avatars from yester-year. unfortunately i wont be home until later this week so i wont have until then to change it into something lame. i'll get to it though.
