Trying to keep up... shredded some to make zucchini bread later in the year (froze it), made stirfry with it, and made some of these tasty little treats:

They weren't quite as good as the Thai corn fritters, but with some variation with spices and such I think they could be...

I guess you could try.... but fry in olive oil. Then it's healthy.

Ate this last night for the first time, must be from the same family. Called "Goya"...very bitter but curiously tasty if cooked well.

Seeds inside, scrape them out then cut it up, eat with the skin on. I've never seen it back home, be interested if you Americans have seen it...about the same size as a cucumber or a zucchini.
