While I certainly can't say I have tried everything, I don't know how I could like something better than my "Shigura" (MT7 calipers with 8100 levers) setup.
And, as you said, replacement parts are cheap and plentiful.
Depends, but once the rag is wet with coating, I just wipe it on. Ideally, you would start with a new build so you can coat each part as you go, but cleaning then coating seems to work just as well. I started using it on my frame, then tried it on my stanchions, and now, almost everything. Helps...

Same here. Currently running an XT shifter and cassette with a Deore derailleur. The main difference between the derailleurs is weight.
Personally, I will take the small weight penalty to have the durability of a steel cage over an aluminum cage.
