beans and rice, my way

this is a little varation on the old stand by Red Beans and Rice.

RICE
1 cup of rice
1/2 an onion, diced
2 1/2 cups of chicken stock (or your favorite liquid)
dash of your favorite spices (I used some Cajun stuff we had)
1 tablespoon of your favorite oil. (I used Olive)
set oven at 375

put the oil in a frying pan that can go in the oven. heat it and add the onion. stir around until they start to get clear and add the rice. stir the rice until it's coated with the oil. you may have to add oil, I would rather add oil, they put in too much at the start...

add the stock, your spices and a bay leaf if you wish. put this in the oven with a loose fitting lid or foil. cook 15 minutes.

BEANS
1 can of black beans
1 can of whole tomatoes (I use whole so I can pick them out later because I hate them so much..:))(you can use whatever you like)
1/2 onion, diced
3 cloves garlic, diced
1 red pepper, diced
some of your favorite spices
dash of red pepper sauce.
1 tablespoon of oil
chicken stock
chicken andoulie sausage (or turkey or whatever you like)

I added the onion to the hot oil and cooked until they started to get clear. then I added the beans, garlic, tomatoes, pepper and a cup or so of chicken stock. cut up the sausage and add to the pan. I cooked over medium heat to blend the flavors. when the rice was done I served the beans over it.

I love red beans & rice...I gair-UN-tee.

you must drown it in hot sauce & serve it with corn bread, though. :D
