I've been noticing some different fox 40 crown heights on pros bikes. Seems like not many spacers under the headset but the crowns are all the way up? Can you run fox 40 higher then 8" under crowns wondering about different setups

It allows for a big range of head angle adjustment without making the BB lower like you would by using angled cups - which is handy on most frames that are already so low that making them even lower would likely slow you down through rougher sections.

I run 9" or more under the crowns, you can use different bar heights (lower if needed) to compensate for the higher front end, or for steeper tracks just leave it. For me personally it means I can run a -1* cup instead of a -2* cup, and get the extra degree or more through fork height while keeping the BB height close to stock.

It's all about flexibility really, I quite enjoy the extra range of adjustment.
