Friend is going on a super long bike touring trip and would like to ship her bike to a shop there. Any recommendations for a solid shop that could build the bike for her out of the box and not F it up.

I grew up in ABQ, and I've been to pretty much every shop in town. Fat Tire is the only one that's half decent. I've ridden with the dude who owns it and he's pretty cool. Apparently his parents are rich, though, and keep the shop afloat while it loses money trying to sell bikes that are too nice for anyone to afford.
That might not be the case anymore, though... It's been a while.
