I talked about this earlier today in the soup thread and thought I'd post it here. It's crazy simple, but its healthy too. My boss gave me the recipe from his brother who got it at a weight watchers meeting. It's pretty high in fiber too.

here goes:
Taco Soup
Makes ~ 8 cup servings

1 Lb very lean ground beef
15 oz can corn
28 oz can Diced Tomatoes
Pouch Taco Seasoning Mix
2 15 oz cans favorite beans
Pouch Ranch Dressing Mix

Brown beef. If you use anything better than 90% you won't need to drain it. Don't drain the beans. Add everything else. Simmer ½ hour. Serve.


I like to change up the vegetables, sometimes I use mixed veggies, sometimes I use other stuff. The canned beans thing is up to you too, my boss used to prefer garbonzo beans because of some health benefit I can't remember. I normally make this once a week and it lasts me into the next work week. Let me know what you think.

I would change the beef to chicken or turkey myself. just because I don't eat beef anymore. (it's a long story..)

and I would use 'real' spices instead of a spice packet. this way I could custom flavor it and those flavor packs usually have a ton of salt and crap in them.
cummin, coriander, chilli powder are all great spices for this

plus, I'd not put tomatoes in or use whole ones so I could pick them out. :)

of course, I'd add some various fresh peppers as well. ;)

other then those changes, it looks good.
