Will 160 mm or 165 mm work??? Will they work well??? Metric conversion tells me that 6" is 152 mm and some change. That seems like a big difference, but it is over a fairly large surface considering I guess. Anyhow - tell me some thoughts.

As long as the rotor does not hit the top of the caliper, you should be good.

I saw a guy rin rotors that were to small. only about 1/2 the brake pad made contact with the rotor. they had plenty on power, but who knows what kind of long term promlems may have come of it.

I think if there is not enough rotor being contacted with the pad, the pads wear wrong and then put the pistons in the wrong position or something

If I understand ur question correctly, you can use a Hayes 6 or 8" rotor with their adaptors. Ive tried magura and avid rotors on hayes calipers and regretted even thinkin about it. It didnt work so well. I wouldnt mix and match.
