If the person is into shopping, there are the Tilton outlet malls one exit up (20), and remember there is no sales tax in NH. It is also about 20 min away from lake Winnipasaukee which offers swiming, boating, food, arcades, shops, train ride, etc. (Weirs Beach). I would send them up to the lake, one could easily entertain themselves there.

MT Washington is a few miles up north, you could send the non rider to climb it.
Dont forget the DIPSY DOODLE DAIRY BAR down the street!
