You can get an 8in disc and then the adaptor to run an 8in rotor and you should be all set.

Shimano makes a nice 8" rotor and so does Gravity Racing Components(GRC). Give Sully a call at 1-425-220-8663 and he can get you set up with a rotor and adapter.
