Soul One by blind melon...it was on the Nico Blue cd they put out after he OD'd to benefit his kid. That was a waste of talent.
Cowboy Junkies first was a great album. Lenny Kravitz had some good acoustic on his first album Rosemary was one track that i wore the tape out on.

Anything by Yonder Mountain String Band, along with lots of stuff by Jerry Garcia and David Grisman. Those are good but I listen to a lot of acoustic music and bluegrass so its hard to say.

I would have two of my favorites would be "Stellar", and "Pardon Me" by Incubus, they really lend themselves to a killer acoustic version.
