Over here we call it Chapon, but I've also heard it called Capon. I don't know what you guys call it, but it's a castrated rooster basically.

Whole beef heads or whole pork heads. Both of those are absolutly awesome. The meat around the face is super tender, little greasy, but really flavorfull. THen once you get past that, you crack it open for the brain inside. You eat the eyes and everything. Tongue will still be inside of it. Takes a bit to cook it thoroughly, but its worth it.


Also, if you really want to have something exotic and good..... Whole suckling pig roasted till done. Basically its just what it sounds like, Its a very young pig that is of coarse still suckling for its nutrition. Gut it, cook it, eat it. You eat everything on it from nose to tail.

Yeah, I'm well aware. Cornish game hens sounds better though, and I just typed that off the tentative menu I had next to me.

You'd think, but we got quite a decent female turnout last year.


Alligator is REALLY good.

Raw octopus is excellent as well.

Other things I've eaten that were not offensive:

-scrapple (east coast thing, specifically Philly)
-crawdads
-turtle

That's all I got off the top of my head.
Some good suggestions there, thanks. To be clear, we can pretty much only do stuff that can be barbecued in the span of maybe an hour.

I've been to Carnivore in Nairobi in early 2001 too.

Squirrel takes maybe 15 min. tops on the grill & they are plentiful this time of year. :D

Wild Boar is pretty good. You really have to braise it though to get it tender without drying out.

Goat is always welcome in my book as well.

Lamb, while not as exotic as some of the other things is always welcome as well.
I'd rather have a nice med-rare piece of lamb than a cow-steak any day!!

Add some organ meats that you can skewer and serve as appetizers - smaller portions so the squeamish can get involved without wasting a lot. Heart and liver work great for that kind of thing, especially wrapped in bacon.

What?! I can't believe you have never heard of the pork parasite. Maybe you have it...
It is pretty sad that we still have to worry about Trichinosis in the US, because raw chopped pork with a little salt, pepper, nutmeg and diced onions spread on top of a buttered kaiser-roll (aka Mettbroetchen) is worth killing for.

is it even a non-issue to eat completely raw pork in the USA? I just always figured that the Germans (who eat gobs and gobs of raw pork) did something special...
