One is going to be chopped up and added along with a pound of beef into my next batch of chili, but I don't really know what to do with the rest. I know I want to smoke them, but I don't have a good recipe.

I figure I will brine them first but other than that I got nothing.

What is a "picnic ham"? Are they already cooked or what?
It is a cut from the upper part of the foreleg that includes part of the shoulder. Technically it isn't ham though.

They are raw.

I have seen a couple of recipes that simply call for throwing it in a crockpot, covering with applejuice and cooking it on low for 8 hours. Sounds a bit sweeet but I bet smoking it in apple/hickory would be good afterwards.

Try beer instead of apple juice. That's what I use when making pulled-pork, although that's usually a shoulder roast.

just a thought.
