Looking to start racing both mtb and cyclocross. I've already got a xc bike, and want to build a cyclocross bike for racing and commuting. Any tips on how to get started in either, or what to build up for cyclocross? I'd like the build to be a single speed.

I'd hit some of the local shops and see what they have in the way of teams and organized rides. See if they have any local info on your race scene and any advice on getting started.

Sure, you can just sign up for something like this bedridden, wanna be riding his bike, schlub suggests, but having some locals show you the way and maybe even race with you in your category sure helps get things going.
