Since we're on the topic of camp food what are some good basic recipes that you guys have made out in the wilderness that are still pretty tasty.

are you backpacking or car camping.... makes a huge difference on what kind of kitchen set up have and what kind of food you can bring.

If you are just camping my favorite has always been beef stew n a dutch oven w/ dumplings. It isn't practical if you are backpacking though.

Clam-y Pasta

Angel Hair (La likes spaghetti)
EVOO
2 packet of whole baby clams (the kind in the foil pouch)
4 or more cloves of garlic, chopped
1 shallot chopped(optional)
1 cup of whatever white wine you will be drinking that night (Viognier goes well)
Handful of fresh italian parsley
S&P
1 pinch (or 2, or 3) of red pepper flakes.

Sautee garlic in evoo & start pasta water. When garlic starts to cook & smell the bomb, add clams along with their juice, sautee for a sec. Add vino & red pepper flakes. Reduce to about 1/4 cup. Season with S&P, add fresh chiffonaded parsley, drain pasta & fold into sauce.

enjoy near campfire.

Personal fave---spaghetti. You can make a decent, hearty sauce by first lightly browning a chopped onion then add a can of spaghetti sauce. Doctor it up by adding canned shrooms, olives or whatever else you like in sauce. If you have a cooler and plan to take perishables, you can also take some frozen meatballs. Take some parmesean packets from your local pizza place as a topper and enjoy. It's not a gourmet meal but is filling and easy to make at a campsite.

I try to keep it simple and go for things that don't need much prep or dishes. Normal grill fare like sausages, burgers, etc., all work well. Soup and fresh bread. Corn on the cob is great, you can just throw it in the coals and it steams pretty well. Potatoes wrapped in foil - same thing, just throw 'em in the coals. (Add a little rosemary if you can find some growing nearby.)

Actually foil packets are great for camping. Rub a piece of fish with olive oil, season with salt and pepper, the put it on a piece of foil. Top with julienned veggies (carrots, leeks, fennel, bell peppers, etc.), and some herbs. Add a splash of wine, maybe a pat of butter, the fold it up and toss it on the grate or in the coals. In ten minutes you will be rocking. (Good with those potatoes.)
