Spent Grain Bread

I made some beer the other day and kept a few cups of the grains to make this bread. I was very supprised at how well it came out. I cooked it on a pizza stone at around 500 for 20 or so minutes, then turned the heat down to around 350-400 and cooked until the inside was about 195 degrees.



3 cups spent grain
5 cups bread flour (approximate)
1 Tbsp salt
1/3 cup brown sugar
1 cup Pale Ale
2 Tbsp vegetable oil
1 pkg dry baking yeast
1/2 tsp sugar
1/2 cup warm (112*F) water

the beer was a pale ale. the grain bill was
8 lbs. 2-Row Pale Malt
2 lbs. Vienna Malt
1 lb. Crystal 10L Malt

Downside to fresh baked bread is, it doesn't last very long......

pnj - glad to know i'm not the only one that cooks bread on a pizza stone.

do you put a water dish in the oven when you cook your bread?

Those last loaves were cooked on a cookie sheet. I don't put a water bath in the oven.....

also, i made two loafs with spent grain. I used about 2-3 cups of grain. I still had to throw out the rest of the 12 pounds from the beer....

Working on making sandwich style bread that uses as much whole fresh ground wheat as possible. This loaf uses just less than half with the other half being King Arthur whole wheat flour.

That bread looks tasty! You could always get a pig for your backyard and feed him spent grains. Imagine a BLT made with spent grain bread and spent grain bacon.

:thumb: A local hog farmer picks up a couple of tons from us several times a week. We also supply a small local bakery with spent grain and wort.

Sprouted wheat. This used mostly fresh ground whole wheat. Good bye to buying five-six dollar loaves of bread....
