white bean salad

I made this white bean salad last night. pretty tastey...

1 can of large white beans, drained.
chopped celary
chopped green onion
chopped red onion
chopped red pepper
red wine vinegar
ground black pepper
salt


add as much of each item that you want. put in the fridge to chill. eat.

Actually Beans don't bother me either, I love the damn things. Protein powder on the other hand....

Sounds good! Are they cannelini beans? Or some other white bean? I'd add some cumin and swap the red vinegar with balsamic. :thumb:

cannelini, yes. we put cumin in just about every dish. leaving it out of this one was fine by me....:)

It's great - with the leftovers you put a stale bread in a casserole dish, cover with the soup, and bake. Then when it's hot you take it out, spoon into bowls, drizzle EV olive oil on and top with copious amounts of freshly grated parmesan. :thumb:
