I enjoy pickled beets. I buy raw ones for my turtle who devours them, turning her face and the walls of her tank bright purple in the process.

We had an AWESOME beet risotto last night. YUM
Beets are awesome. My favorite is roasting a chicken with potatoes, beets and maybe some carrots thrown in for good measure. Copious amounts of butter and salt, and mmmmmmmmm...

Had beets again this Christmas. They were still horrible. Made them somewhat palatable with copious amounts of horseradish and sour cream.

Beets are one of the few veggies I don't get along with. I've tried to like them but the sweetness is almost sickening, like a yam gone wrong or something.
I am interested to try "golden" beets but I've never seen them before. Do they have a more mild flavor than red beets?

Beets are the best. I brought some to work with my juicer and let my kids juice them. They were so freaked out. Most held the same conclusion that you have come to. They hated it. I could eat them all day every day AND drink the juice.

I just planted beet seeds in my coldframe Sunday evening. I'm not a huge fan of beets, but have yet to go the roasting route. I do love some beet greens though....
I hate you, it's still 4deg here with about 15min of sunshine per day...
These took 24 days (they usually average 11 to 17) to germinate and the cold frame has been under snow 3 times, but I have a very nice crop of beets with some volunteer salad greens filling in the blank spots.
I look upon you sadly, you who do not not partake in beet appreciation.
