Exotic meats

I'm helping host a party in a few weeks where we get a whole bunch of exotic meat, a keg, and sit around and consume copious amounts of both. Any suggestions for what would be reasonable for meat selection? We've got a bunch of stuff lined up already, but could always use more ideas.

the hard part with meats is you never know how it was prepped before cutting thus not knowing the quality and taste.

ground bison makes for pretty good burgers

elk steaks (from any ranch) are really lean and tender

bear hams from the northwest are really good

not too sure what you are looking for but those are a few suggestions

- cow intestines (on the grill) (need a lot of prep before making it to the grill)
- spanish sausage (chistorra)
- cow tongue (not on the grill, you have to cook it)

Here's what we're planning on so far:

-Buffalo patties
-Ostrich patties
-Duck breasts
-Tuna steaks
-Swordfish steaks
-Whole cornish game hens
-Whole rabbits
-Assorted cuts of beef
-Couple other things I'm forgetting but have written down elsewhere
-Veggie burgers for the vegimatarieans

In case you missed first round...ostrich sucks.
Yeah, but Eric recommended it, so I figured that cancels out.

I should add that we don't have to pay for any of this (though our budget is defiantly not unlimited) so I'm not that worried about everything being perfect.

If you really want to get weird, try raw fish eyes.

I've done it once at a sushi place and will not eat another one. They pop in your mouth and words fail to describe the taste or the texture of the eye fluid.

Let me also note that preparing ostrich is mostly what makes it suck. It smells a lot like ass flesh from a wildebeest that has been marinating in battery acid for 3 days. I guess I don't dislike the taste nearly as much as the smell.

Your list needs more organ meats. Maybe some pig ears too.

I've been pushing for more organ meat, but the other couple guys organizing this with me have been resistant.

Pigs ears is a good call.

Get yerself some lamb testes. I'm not saying they're nice. Drunken fun...

although it may offend some (and i was sceptical myself) i have to admit that horse steaks are delicious!

Kangaroo. Very lean, gets tough fast, but if not overcooked is not bad.

Emu (probably more available than ostrich). Not really that exciting.

Sweet breads

Chicken feet. Deep fried and served in a chili sauce.

Remember what I said about not ordering a steak when you want your seat raised.

You could serve gator tail. Tenderize, salt pepper flour, then fry.

Alligator is REALLY good.

Raw octopus is excellent as well.

Other things I've eaten that were not offensive:

-Squirrel
-Duck skin (when I was in China)
-Goat brain (again, China)
-chitlins
-scrapple (east coast thing, specifically Philly)
-crawdads
-turtle

That's all I got off the top of my head.

Nice list, but you knows are just baby chickens right? :rofl:

Ostrich is good if done right, Emu too. I used to date a chick in high school who lived on an emu farm. those things aren't right & should have been extinct with the rest of the dinosaurs.

You should add foie gras, veal of some sort ( i have been reading about swedish veal brats those sound :drool:x100) & something you killed yourself.
