i was under the impression tomatoes should be red in color....am i mistaken mr foerever 28 inch waist?....
Cut the zucchini into 3/4" disks and saute in butter and shallots. Gut and then roast the mators. Mash the mators to plate and put the zucchini and shallots on top. Finish with Parmesan, salt, and pepper. Serve with crusty bread and maybe some antipasto....
